Pressurized portafilters produce
better crema due to pre-infusion delay in the extraction of
espresso. The delay of 3 to 5 seconds provides time for coffee
grounds to soak, swell and prepare for a better extract in
shorter extraction time (15 seconds or less). With pre-infusion, the
coffee grounds need not be powdery fine and tamping pressure
can be reduced to less than 5-lbs. p.s.i. The pre-infusion
makes sweeter espresso and eliminates the burnt and bitter
taste. Please do not be misled with what is recommended on
Coffee geeks.
All of the portafilters displayed
below are of identical size and interchangeable for use in semi
automatic models of Saeco. Identify the Gran Crema with the
Manually pressurized portafilter, by comparing the bottom
view, shown in the pictures below.
